Peach sponge pudding
How about this properly delightful thing to make and share this weekend?
So….what should we cook this weekend? What about a hot peach sponge with cold cream (or ice cream)?
Honestly, this pudding is a delight; fluffy vanilla sponge sitting atop a tangy, hot puddle of peaches. This is a life-affirming, comforting joy that you can make with your own two hands and get in then out of the oven, ready to share, in under an hour.
We have a peach tree that grows right next to our pizza oven, and I’m always excited when I can pick straight from it, do a little light slicing and tossing with sugar, lemon and vanilla and get them straight into the oven (as per this vid).
I’ll be making this pud again on the weekend and will throw in a couple of handfuls of blackberries. Yuuuuuum. Stewed apples, poached quince and/or pear will be nice here too in a couple of months.
